Ingredients:
- 1 large head of garlic
- 1/2 cup mayonnaise (preferably homemade or high-quality store-bought)
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 1 lb ground beef (80% lean)
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 4 burger buns (preferably brioche or whole wheat)
- Optional toppings: lettuce, tomato, cheese, pickles
Instructions:
- Preheat the oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
- Squeeze the roasted garlic from the skins into a bowl. Combine with mayonnaise, lemon juice, mustard, salt, and pepper. Mix well. Refrigerate for at least 1 hour to enhance flavors.
- In a bowl, combine ground beef, salt, pepper, and smoked paprika. Gently mix until just combined. Divide mixture into 4 equal portions (about 4 oz each) and shape into patties.
- Preheat the grill to medium-high heat. Grill the patties for 4-5 minutes on each side until an internal temperature of 160°F (71°C) is reached.
- Optional: Place buns on the grill for 1-2 minutes until lightly toasted.
- Spread roasted garlic aioli on the bottom half of each bun. Top with grilled beef patty and desired toppings before closing the bun.
