Ingredients:

  • 1 large head of garlic
  • 1/2 cup mayonnaise (preferably homemade or high-quality store-bought)
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 lb ground beef (80% lean)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 4 burger buns (preferably brioche or whole wheat)
  • Optional toppings: lettuce, tomato, cheese, pickles

Instructions:

  1. Preheat the oven to 400°F (200°C). Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft.
  2. Squeeze the roasted garlic from the skins into a bowl. Combine with mayonnaise, lemon juice, mustard, salt, and pepper. Mix well. Refrigerate for at least 1 hour to enhance flavors.
  3. In a bowl, combine ground beef, salt, pepper, and smoked paprika. Gently mix until just combined. Divide mixture into 4 equal portions (about 4 oz each) and shape into patties.
  4. Preheat the grill to medium-high heat. Grill the patties for 4-5 minutes on each side until an internal temperature of 160°F (71°C) is reached.
  5. Optional: Place buns on the grill for 1-2 minutes until lightly toasted.
  6. Spread roasted garlic aioli on the bottom half of each bun. Top with grilled beef patty and desired toppings before closing the bun.
