Ingredients:

  • Large russet potatoes (baking potatoes), 1 per person (approximately 8-12 ounces / 225-340 grams each)
  • Olive oil, 1 tablespoon (15 ml) per potato
  • Coarse sea salt, to taste
  • Black pepper, to taste

Instructions:

  1. Preheat oven to 400°F (200°C).
  2. Wash potatoes thoroughly and pat dry. Prick each potato several times with a fork.
  3. Rub potatoes with olive oil, ensuring even coverage. Sprinkle generously with coarse sea salt and black pepper.
  4. Place potatoes directly on the baking sheet (no need for foil) and bake for 60-90 minutes, or until the skin is crispy and a fork easily pierces the center of the potato. The internal temperature should be around 210°F (99°C).
  5. Squeeze the potato gently. It should feel soft and yielding.
  6. Cut a slit in the top of each potato, fluff the insides with a fork, and add your favorite toppings. Serve immediately.
