Ingredients:
- 3 very ripe bananas, mashed (approx. 1 ½ cups) (330g)
- ⅓ cup (2.66 oz or 75g) unsalted butter, melted
- ¾ cup (6 oz or 170g) granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract (5ml)
- 1 ½ cups (7.13 oz or 202g) all-purpose flour
- 1 teaspoon baking soda (5g)
- ½ teaspoon ground cinnamon (2g)
- ¼ teaspoon salt (1.5g)
- Optional: ½ cup (3 oz or 85g) chopped walnuts or pecans
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a large bowl, mash the bananas until smooth. Add the melted butter, sugar, egg, and vanilla extract. Whisk until well combined.
- In the same bowl, add the flour, baking soda, cinnamon, and salt. Gently fold the dry ingredients into the wet ingredients until just combined. Do not overmix!
- If using, gently fold in the chopped walnuts or pecans.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 55-65 minutes, or until a wooden skewer inserted into the center comes out clean, or with just a few moist crumbs attached. (Start checking at 55 minutes).
- Let the banana bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
