Ingredients:

  • 1 medium fresh pineapple, peeled, cored, and sliced into rings (approximately 3 cups / 450g)
  • 2 tablespoons (30ml) honey
  • 1 tablespoon (15ml) lime juice (freshly squeezed)
  • ½ teaspoon (2g) ground cinnamon (optional)
  • Fresh mint leaves for garnish
  • Vanilla ice cream or whipped cream for serving

Instructions:

  1. Peel and core the pineapple; slice into rings (about ½ inch thick).
  2. In a small bowl, combine honey, lime juice, and ground cinnamon (if using).
  3. Preheat your grill to medium-high heat (about 400°F / 200°C).
  4. Use a basting brush to coat both sides of each pineapple ring with the glaze.
  5. Place the pineapple rings on the grill. Grill for 5-6 minutes on each side, or until grill marks appear and the pineapple is caramelized.
  6. Remove from grill, garnish with fresh mint, and serve immediately with vanilla ice cream or whipped cream, if desired.
