Ingredients:
- 1 medium fresh pineapple, peeled, cored, and sliced into rings (approximately 3 cups / 450g)
- 2 tablespoons (30ml) honey
- 1 tablespoon (15ml) lime juice (freshly squeezed)
- ½ teaspoon (2g) ground cinnamon (optional)
- Fresh mint leaves for garnish
- Vanilla ice cream or whipped cream for serving
Instructions:
- Peel and core the pineapple; slice into rings (about ½ inch thick).
- In a small bowl, combine honey, lime juice, and ground cinnamon (if using).
- Preheat your grill to medium-high heat (about 400°F / 200°C).
- Use a basting brush to coat both sides of each pineapple ring with the glaze.
- Place the pineapple rings on the grill. Grill for 5-6 minutes on each side, or until grill marks appear and the pineapple is caramelized.
- Remove from grill, garnish with fresh mint, and serve immediately with vanilla ice cream or whipped cream, if desired.
