Ingredients:

  • 2 large (approx. 1 lb / 450g) red onions, peeled and sliced into 1/2-inch thick rounds
  • 3 tbsp (45ml) olive oil
  • 2 tbsp (30ml) balsamic vinegar
  • 2 tbsp (25g) brown sugar, packed
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. Slice the red onions into 1/2-inch thick rounds. Gently press down on each round to separate the layers slightly, then cut each round into halves or quarters.
  2. In a large bowl, whisk together the olive oil, balsamic vinegar, brown sugar, salt, and pepper. Toss the onion pieces in the mixture until thoroughly coated and let sit for 5–10 minutes.
  3. Place the onions on a medium-high grill (approx. 400°F / 200°C). Grill for 5–7 minutes per side until a deep mahogany color and distinct charred grill marks appear.
  4. During the last 2 minutes of cooking, brush any remaining marinade from the bowl onto the onions to create a sticky, lacquer-like finish.
