Ingredients:

  • 1 lb (450 g) boneless, skinless chicken breasts
  • 2 tablespoons (30 ml) Hello Fresh Southwest Spice Blend
  • 1 tablespoon (15 ml) olive oil
  • 8 small corn tortillas
  • 1 cup (150 g) cherry tomatoes, halved
  • 1/2 cup (75 g) red onion, thinly sliced
  • 1 cup (150 g) shredded lettuce
  • 1 ripe avocado
  • 1/2 cup (120 ml) Greek yogurt (or sour cream)
  • 1 tablespoon (15 ml) lime juice
  • Salt and pepper, to taste

Instructions:

  1. Slice chicken breasts into strips. In a bowl, mix chicken strips with olive oil and Southwest Spice Blend.
  2. Heat the skillet over medium heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and golden brown.
  3. In a mixing bowl, mash the avocado. Stir in Greek yogurt, lime juice, salt, and pepper until smooth.
  4. In a dry skillet, lightly warm each tortilla for 30 seconds on each side.
  5. Place cooked chicken on warm tortillas. Top with cherry tomatoes, red onion, and shredded lettuce. Drizzle with avocado crema.
  6. Serve immediately with extra lime wedges on the side.
