Ingredients:
- 1 lb (450 g) boneless, skinless chicken breasts
- 2 tablespoons (30 ml) Hello Fresh Southwest Spice Blend
- 1 tablespoon (15 ml) olive oil
- 8 small corn tortillas
- 1 cup (150 g) cherry tomatoes, halved
- 1/2 cup (75 g) red onion, thinly sliced
- 1 cup (150 g) shredded lettuce
- 1 ripe avocado
- 1/2 cup (120 ml) Greek yogurt (or sour cream)
- 1 tablespoon (15 ml) lime juice
- Salt and pepper, to taste
Instructions:
- Slice chicken breasts into strips. In a bowl, mix chicken strips with olive oil and Southwest Spice Blend.
- Heat the skillet over medium heat. Add the seasoned chicken and cook for 5-7 minutes, stirring occasionally, until cooked through and golden brown.
- In a mixing bowl, mash the avocado. Stir in Greek yogurt, lime juice, salt, and pepper until smooth.
- In a dry skillet, lightly warm each tortilla for 30 seconds on each side.
- Place cooked chicken on warm tortillas. Top with cherry tomatoes, red onion, and shredded lettuce. Drizzle with avocado crema.
- Serve immediately with extra lime wedges on the side.
