Ingredients:
- 1.5 cups (180g) all-purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 2 cups (160g) old-fashioned rolled oats
- 1 cup (2 sticks, 227g) unsalted butter, melted
- 1 cup (220g) packed brown sugar
- 0.5 cup (100g) granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1.5 cups (255g) semi-sweet chocolate chips
Instructions:
- Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper. In a medium bowl, whisk together the flour, baking soda, salt, and old-fashioned rolled oats. Set aside.
- In a separate large mixing bowl, whisk the melted butter, packed brown sugar, and granulated sugar until thoroughly combined. The mixture should be smooth.
- Beat in the eggs one at a time until just incorporated. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing on low speed or by hand until a dough forms and no streaks of flour remain. Fold in the chocolate chips. Use a cookie scoop to portion dough balls onto the prepared baking sheets. For optimal thickness, place the sheets in the freezer for 10 minutes while the oven finishes heating.
- Bake for 10-12 minutes, or until the edges are golden brown and the centers still look soft and slightly underbaked. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
