Ingredients:

  • 1.5 cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 2 cups (160g) old-fashioned rolled oats
  • 1 cup (2 sticks, 227g) unsalted butter, melted
  • 1 cup (220g) packed brown sugar
  • 0.5 cup (100g) granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1.5 cups (255g) semi-sweet chocolate chips

Instructions:

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper. In a medium bowl, whisk together the flour, baking soda, salt, and old-fashioned rolled oats. Set aside.
  2. In a separate large mixing bowl, whisk the melted butter, packed brown sugar, and granulated sugar until thoroughly combined. The mixture should be smooth.
  3. Beat in the eggs one at a time until just incorporated. Stir in the vanilla extract.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed or by hand until a dough forms and no streaks of flour remain. Fold in the chocolate chips. Use a cookie scoop to portion dough balls onto the prepared baking sheets. For optimal thickness, place the sheets in the freezer for 10 minutes while the oven finishes heating.
  5. Bake for 10-12 minutes, or until the edges are golden brown and the centers still look soft and slightly underbaked. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
