Ingredients:
- 2 medium yellow squash (approx. 1 lb), cut into spears or halves
- 2 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1 tsp garlic powder
- 1/4 cup grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Slice the yellow squash into spears (quarters lengthwise) or halves, and pat the cut sides dry with a paper towel to remove excess surface moisture.
- In a large mixing bowl, toss the squash with olive oil, salt, pepper, and garlic powder until evenly coated.
- Arrange the squash in a single layer on the prepared baking sheet, ensuring the pieces do not touch to prevent steaming.
- Roast for 12 minutes, then remove the pan and sprinkle the grated Parmesan cheese evenly over the top of each piece.
- Return to the oven for an additional 3 minutes, or switch to the broiler for 60-90 seconds until the cheese is bubbling and golden brown.
- Remove from the oven and garnish immediately with chopped fresh parsley.
