Ingredients:

  • 2 medium yellow squash (approx. 1 lb), cut into spears or halves
  • 2 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 tsp garlic powder
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Slice the yellow squash into spears (quarters lengthwise) or halves, and pat the cut sides dry with a paper towel to remove excess surface moisture.
  3. In a large mixing bowl, toss the squash with olive oil, salt, pepper, and garlic powder until evenly coated.
  4. Arrange the squash in a single layer on the prepared baking sheet, ensuring the pieces do not touch to prevent steaming.
  5. Roast for 12 minutes, then remove the pan and sprinkle the grated Parmesan cheese evenly over the top of each piece.
  6. Return to the oven for an additional 3 minutes, or switch to the broiler for 60-90 seconds until the cheese is bubbling and golden brown.
  7. Remove from the oven and garnish immediately with chopped fresh parsley.
