- 4 cups mixed greens (e.g., spinach, rocket)
- 1 cup cherry tomatoes, halved
- 1 medium avocado, sliced or diced
Instructions:
- Prepare the Tuna: Open the cans of tuna, drain thoroughly, and flake the tuna into a mixing bowl.
- Combine Wet Ingredients: Add the cottage cheese, Dijon mustard, and fresh lemon juice to the bowl with the flaked tuna.
- Incorporate Vegetables & Herbs: Fold in the finely diced celery, minced red onion, and chopped fresh dill.
- Seasoning Check: Season generously with freshly cracked black pepper and salt. Stir everything gently until just combined. Avoid overmixing to maintain texture.
- Taste and Adjust: Taste the mixture and add a small squeeze more lemon juice or a pinch more salt if needed.
