Ingredients:
- 1 lb (450g) zucchini, diced into ½ inch pieces
- 1 red bell pepper (150g), diced
- 1 bunch (200g) asparagus, trimmed and cut into 2-inch pieces
- 2 tbsp (30ml) extra virgin olive oil
- ½ tsp (3g) sea salt
- ¼ tsp (1g) cracked black pepper
- 2 cups (60g) packed fresh basil leaves
- ½ cup (60g) freshly grated Parmesan cheese
- ⅓ cup (50g) toasted pine nuts or walnuts
- 3 cloves (15g) garlic, peeled
- ½ cup (120ml) extra virgin olive oil
- 1 tbsp (15ml) fresh lemon juice
- ¼ tsp (1.5g) salt
- 1 lb (450g) Penne or Fusilli pasta
- 4 qts (3.8L) water
- 2 tbsp (30ml) salt
Instructions:
- Preheat the oven to 400°F (200°C).
- Toss the diced zucchini, bell pepper, and asparagus on a baking sheet with 2 tbsp olive oil, salt, and pepper, spreading them in a single layer.
- Roast the vegetables for 15–20 minutes until the edges are charred and vegetables are crisp-tender.
- Pulse the basil, toasted nuts, garlic, and lemon juice in a food processor until coarsely chopped.
- With the food processor motor running on low, slowly drizzle in 1/2 cup olive oil until the mixture is smooth and emulsified.
- Fold in the grated Parmesan cheese by hand or pulse briefly to combine without over-processing.
- Boil the pasta in salted water until al dente.
- Reserve 1 cup (240ml) of the starchy pasta water before draining the pasta.
- Return the drained pasta to the pot over low heat, then add the roasted vegetables and the fresh pesto.
- Gradually pour in the reserved pasta water, tossing constantly, until the sauce is glossy and clings to the pasta.
