Ingredients:
- 1.5 lbs yellow squash, sliced into 1/2-inch rounds
- 2 tbsp extra virgin olive oil
- 1 tsp garlic powder
- ½ tsp kosher salt
- ¼ tsp cracked black pepper
- ½ cup grated Parmesan cheese
Instructions:
- Preheat your oven to 425°F (218°C) and line a rimmed baking sheet with parchment paper.
- Slice the yellow squash into uniform 1/2-inch rounds or halves.
- In a large mixing bowl, toss the squash with olive oil, garlic powder, salt, and pepper until every piece is evenly coated.
- Spread the squash in a single layer on the prepared baking sheet, ensuring pieces are not crowded.
- Sprinkle the grated Parmesan cheese evenly over the top of the squash.
- Bake for 12–15 minutes until the edges are a deep mahogany color and the cheese has formed a golden, bubbling crust.
