Ingredients:

  • 1.5 lbs yellow squash, sliced into 1/2-inch rounds
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • ½ tsp kosher salt
  • ¼ tsp cracked black pepper
  • ½ cup grated Parmesan cheese

Instructions:

  1. Preheat your oven to 425°F (218°C) and line a rimmed baking sheet with parchment paper.
  2. Slice the yellow squash into uniform 1/2-inch rounds or halves.
  3. In a large mixing bowl, toss the squash with olive oil, garlic powder, salt, and pepper until every piece is evenly coated.
  4. Spread the squash in a single layer on the prepared baking sheet, ensuring pieces are not crowded.
  5. Sprinkle the grated Parmesan cheese evenly over the top of the squash.
  6. Bake for 12–15 minutes until the edges are a deep mahogany color and the cheese has formed a golden, bubbling crust.
