Ingredients:
- 3 medium ripe bananas, mashed (approximately 1 ½ cups / 340g)
- ½ cup (1 stick / 113g) unsalted butter, melted
- ¾ cup (150g) granulated sugar
- 1 large egg
- 1 teaspoon pure vanilla extract (5ml)
- 1 ½ cups (192g) all-purpose flour, spooned and leveled
- 1 teaspoon baking soda (5ml)
- ½ teaspoon ground cinnamon (2.5ml)
- ¼ teaspoon salt (1.25ml)
- ½ cup chopped walnuts or pecans (optional) (50g)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line with parchment paper, leaving an overhang for easy removal.
- In a large mixing bowl, mash the bananas with a fork until mostly smooth (a few small lumps are fine). Melt the butter in a microwave-safe bowl or on the stovetop and add to the mashed bananas.
- Add the sugar, egg, and vanilla extract to the banana mixture and whisk until well combined.
- In a separate small bowl, whisk together the flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
- Gently fold in the chopped nuts, if using.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
