Ingredients:

  • 3 medium ripe bananas, mashed (approximately 1 ½ cups / 340g)
  • ½ cup (1 stick / 113g) unsalted butter, melted
  • ¾ cup (150g) granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract (5ml)
  • 1 ½ cups (192g) all-purpose flour, spooned and leveled
  • 1 teaspoon baking soda (5ml)
  • ½ teaspoon ground cinnamon (2.5ml)
  • ¼ teaspoon salt (1.25ml)
  • ½ cup chopped walnuts or pecans (optional) (50g)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan or line with parchment paper, leaving an overhang for easy removal.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth (a few small lumps are fine). Melt the butter in a microwave-safe bowl or on the stovetop and add to the mashed bananas.
  3. Add the sugar, egg, and vanilla extract to the banana mixture and whisk until well combined.
  4. In a separate small bowl, whisk together the flour, baking soda, cinnamon, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the chopped nuts, if using.
  7. Pour the batter into the prepared loaf pan.
  8. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs attached.
  9. Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
