Ingredients:
- 2 lbs fresh strawberries, hulled and halved
- 1/2 cup fresh lemon juice
- 3 cups granulated white sugar
Instructions:
- Combine the halved strawberries, lemon juice, and sugar in a large heavy-bottomed pot. Use a potato masher to crush the berries until the desired consistency is reached.
- Place the pot over medium heat, stirring constantly until the sugar completely dissolves.
- Increase the heat to medium-high and bring the mixture to a rolling boil, stirring frequently to prevent the sugars from scorching.
- Perform the plate test: drop a small spoonful of jam onto a frozen plate and let it sit for 30 seconds. If the jam wrinkles when pushed with a finger, remove from heat immediately.
