Ingredients:

  • 2 lbs fresh strawberries, hulled and halved
  • 1/2 cup fresh lemon juice
  • 3 cups granulated white sugar

Instructions:

  1. Combine the halved strawberries, lemon juice, and sugar in a large heavy-bottomed pot. Use a potato masher to crush the berries until the desired consistency is reached.
  2. Place the pot over medium heat, stirring constantly until the sugar completely dissolves.
  3. Increase the heat to medium-high and bring the mixture to a rolling boil, stirring frequently to prevent the sugars from scorching.
  4. Perform the plate test: drop a small spoonful of jam onto a frozen plate and let it sit for 30 seconds. If the jam wrinkles when pushed with a finger, remove from heat immediately.
