Ingredients:
- 2 cups (400g) Granulated Sugar
- ½ cup (113g/1 stick) Unsalted Butter, cut into cubes
- ½ cup (120ml) Milk (whole or 2% recommended)
- ¼ cup (25g) Unsweetened Cocoa Powder
- ½ teaspoon (2.5ml) Salt
- 3 cups (270g) Quick-Cooking Oats (not instant)
- ½ cup (120ml) Creamy Peanut Butter
- 1 teaspoon (5ml) Vanilla Extract
Instructions:
- Line a baking sheet with parchment paper (optional).
- In a large saucepan, combine sugar, butter, milk, cocoa powder, and salt.
- Bring the mixture to a rolling boil over medium heat, stirring constantly to prevent burning.
- Once boiling, continue to cook for exactly 1 minute, stirring constantly. (Set a timer!)
- Take the saucepan off the heat.
- Quickly stir in the oats, peanut butter, and vanilla extract until everything is evenly combined.
- Drop spoonfuls of the mixture onto the prepared baking sheet. A cookie scoop helps with uniform sizes.
- Let the cookies cool completely and set at room temperature. Optionally transfer to the refrigerator for quicker results for approximately 30 minutes, or until firm.
