Ingredients:

  • 2 cups (400g) Granulated Sugar
  • ½ cup (113g/1 stick) Unsalted Butter, cut into cubes
  • ½ cup (120ml) Milk (whole or 2% recommended)
  • ¼ cup (25g) Unsweetened Cocoa Powder
  • ½ teaspoon (2.5ml) Salt
  • 3 cups (270g) Quick-Cooking Oats (not instant)
  • ½ cup (120ml) Creamy Peanut Butter
  • 1 teaspoon (5ml) Vanilla Extract

Instructions:

  1. Line a baking sheet with parchment paper (optional).
  2. In a large saucepan, combine sugar, butter, milk, cocoa powder, and salt.
  3. Bring the mixture to a rolling boil over medium heat, stirring constantly to prevent burning.
  4. Once boiling, continue to cook for exactly 1 minute, stirring constantly. (Set a timer!)
  5. Take the saucepan off the heat.
  6. Quickly stir in the oats, peanut butter, and vanilla extract until everything is evenly combined.
  7. Drop spoonfuls of the mixture onto the prepared baking sheet. A cookie scoop helps with uniform sizes.
  8. Let the cookies cool completely and set at room temperature. Optionally transfer to the refrigerator for quicker results for approximately 30 minutes, or until firm.
