Ingredients:
- 2 lbs boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon salt (for chicken)
- 1/2 teaspoon black pepper (for chicken)
- 1 lb fresh broccoli florets
- 1/2 cup unsalted butter
- 1/2 cup all-purpose flour
- 3 cups milk
- 1/2 teaspoon salt (for sauce)
- 1/4 teaspoon black pepper (for sauce)
- 1/4 teaspoon ground nutmeg (optional)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 1 1/2 cups crushed Ritz crackers
- 6 tablespoons unsalted butter, melted
Instructions:
- Season chicken with salt and pepper. Cook in skillet with olive oil until done. Shred or cube.
- Steam broccoli until tender-crisp.
- Melt butter in skillet, whisk in flour and cook 1-2 minutes. Gradually whisk in milk, stirring constantly. Simmer until thickened. Season with salt, pepper, and nutmeg.
- Remove sauce from heat, stir in mayonnaise, sour cream, and 3/4 cup cheese.
- Combine chicken, broccoli, and sauce in a large bowl.
- Pour mixture into a 9x13 inch baking dish.
- Combine crushed Ritz crackers and melted butter.
- Sprinkle cracker mixture and remaining cheese over casserole.
- Bake at 350°F (175°C) for 30-35 minutes.
- Cool slightly before serving.
