Ingredients:

  • 2 lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt (for chicken)
  • 1/2 teaspoon black pepper (for chicken)
  • 1 lb fresh broccoli florets
  • 1/2 cup unsalted butter
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1/2 teaspoon salt (for sauce)
  • 1/4 teaspoon black pepper (for sauce)
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 1/2 cups crushed Ritz crackers
  • 6 tablespoons unsalted butter, melted

Instructions:

  1. Season chicken with salt and pepper. Cook in skillet with olive oil until done. Shred or cube.
  2. Steam broccoli until tender-crisp.
  3. Melt butter in skillet, whisk in flour and cook 1-2 minutes. Gradually whisk in milk, stirring constantly. Simmer until thickened. Season with salt, pepper, and nutmeg.
  4. Remove sauce from heat, stir in mayonnaise, sour cream, and 3/4 cup cheese.
  5. Combine chicken, broccoli, and sauce in a large bowl.
  6. Pour mixture into a 9x13 inch baking dish.
  7. Combine crushed Ritz crackers and melted butter.
  8. Sprinkle cracker mixture and remaining cheese over casserole.
  9. Bake at 350°F (175°C) for 30-35 minutes.
  10. Cool slightly before serving.
