Ingredients:
- 1 pound kielbasa, sliced into rounds
- 4 cups russet potatoes, peeled and diced
- 1 small onion, finely chopped
- 2 cups heavy cream
- 2 cups shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 2 tablespoons unsalted butter, for greasing the pan
Instructions:
- Preheat the oven to 375°F (190°C).
- Prepare the baking dish by greasing it with butter.
- In a frying pan, sauté the sliced kielbasa over medium heat until browned, about 5-7 minutes. Remove and set aside.
- In a large mixing bowl, combine diced potatoes, chopped onion, garlic powder, onion powder, salt, and pepper.
- Spread half of the potato mixture evenly in the greased baking dish. Sprinkle half of the cooked kielbasa over the potatoes. Layer half of the shredded cheddar and mozzarella cheeses.
- Add the remaining potato mixture, followed by the rest of the kielbasa and cheeses.
- Pour the heavy cream evenly over the top of the casserole.
- Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15 minutes or until golden and bubbly.
- Ensure the potatoes are soft by piercing them with a fork.
- Allow to cool for a few minutes before serving.
