Ingredients:

  • 1 pound kielbasa, sliced into rounds
  • 4 cups russet potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 2 cups heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter, for greasing the pan

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the baking dish by greasing it with butter.
  3. In a frying pan, sauté the sliced kielbasa over medium heat until browned, about 5-7 minutes. Remove and set aside.
  4. In a large mixing bowl, combine diced potatoes, chopped onion, garlic powder, onion powder, salt, and pepper.
  5. Spread half of the potato mixture evenly in the greased baking dish. Sprinkle half of the cooked kielbasa over the potatoes. Layer half of the shredded cheddar and mozzarella cheeses.
  6. Add the remaining potato mixture, followed by the rest of the kielbasa and cheeses.
  7. Pour the heavy cream evenly over the top of the casserole.
  8. Cover with foil and bake for 30 minutes, then uncover and bake for an additional 15 minutes or until golden and bubbly.
  9. Ensure the potatoes are soft by piercing them with a fork.
  10. Allow to cool for a few minutes before serving.
