Ingredients:

  • 1 (15-ounce) can chickpeas, drained and rinsed (425g)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ¼ teaspoon cayenne pepper (or more to taste)
  • Salt and black pepper to taste
  • 2 ripe avocados
  • 1 tablespoon lime juice (15 ml)
  • 2 tablespoons chopped fresh cilantro
  • Pinch of red pepper flakes (optional)
  • 2 slices bread (sourdough, whole wheat, etc.)
  • Butter or olive oil for toasting (optional)

Instructions:

  1. Preheat oven to 400°F (200°C). Toss drained and rinsed chickpeas with olive oil and spices in a large bowl until evenly coated.
  2. Spread seasoned chickpeas in a single layer on a baking sheet. Roast for 15-20 minutes, or until crispy and golden brown, shaking halfway through.
  3. While the chickpeas are roasting, mash avocados in a bowl with lime juice, cilantro, salt, pepper, and optional red pepper flakes. Adjust seasoning to taste.
  4. Toast bread to desired crispness using a toaster, grill pan, or frying pan with butter.
  5. Spread avocado mash evenly onto toasted bread. Top with crispy spicy chickpeas.
