Ingredients:

  • 4 tbsp (57g) unsalted butter
  • 2 cloves garlic, minced
  • 1 ½ cups (355ml) heavy cream
  • 1 cup (100g) grated Parmesan cheese, freshly grated is best
  • ¼ tsp salt, or to taste
  • ⅛ tsp black pepper, freshly ground
  • Optional: pinch of nutmeg

Instructions:

  1. In a saucepan over medium-low heat, melt the butter. Add the minced garlic and sauté for about 1 minute, or until fragrant, being careful not to burn it.
  2. Pour in the heavy cream and bring to a gentle simmer, stirring occasionally.
  3. Reduce the heat to low. Gradually whisk in the grated Parmesan cheese, a little at a time, until fully melted and the sauce is smooth.
  4. Season with salt, pepper, and a pinch of nutmeg (if using). Taste and adjust seasonings as needed.
  5. Let the sauce simmer gently for a few minutes to thicken slightly. Serve immediately over your favorite keto-friendly pasta alternative, protein, or vegetables.
