Ingredients:
- 2 large sweet onions (approx. 1 lb)
- 1 tbsp neutral oil
- 3 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp freshly cracked black pepper
- 1/2 tsp garlic powder
Instructions:
- Peel the onions and trim the stem end. Slice the onion into 6 to 8 wedges, stopping the cut just before the root to keep the wedge held together.
- In a large bowl, toss the onion wedges with the olive oil, salt, pepper, and garlic powder until every surface is evenly coated.
- Preheat grill to medium-high heat and lightly oil the grates. Place wedges directly on the grill and cook for 4–6 minutes per side until a deep mahogany char forms.
- Remove the onions from the grill and let them rest on a platter for 2 minutes to allow the center to finish softening.
