Ingredients:

  • 6 cups fresh peaches, peeled and sliced (900g)
  • ¾ cup granulated sugar (150g)
  • 2 tablespoons all-purpose flour (25g)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon ground cinnamon (5g)
  • ¼ teaspoon ground nutmeg (1g)
  • 2 tablespoons unsalted butter, cut into small pieces (30g)
  • 1 ½ cups all-purpose flour (190g)
  • ⅓ cup granulated sugar (65g)
  • 1 ½ teaspoons baking powder (6g)
  • ¼ teaspoon salt (1.5g)
  • 6 tablespoons unsalted butter, cold and cut into small pieces (85g)
  • ½ cup whole milk (120ml)
  • 1 tablespoon granulated sugar (for sprinkling)

Instructions:

  1. Combine sliced peaches, sugar, flour, lemon juice, cinnamon, and nutmeg in a large bowl. Toss gently to coat. Dot with butter pieces.
  2. In a medium bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter using a pastry blender or fork until the mixture resembles coarse crumbs.
  3. Gradually add milk to the flour mixture, mixing until just combined. Do not overmix.
  4. Pour the peach filling into the prepared baking dish. Drop spoonfuls of biscuit dough evenly over the peach filling.
  5. Sprinkle the top of the cobbler with remaining sugar. Bake in a preheated oven at 375°F (190°C) for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
  6. Let cool slightly before serving.
