Ingredients:
- 6 cups fresh peaches, peeled and sliced (900g)
- ¾ cup granulated sugar (150g)
- 2 tablespoons all-purpose flour (25g)
- 1 tablespoon lemon juice (15ml)
- 1 teaspoon ground cinnamon (5g)
- ¼ teaspoon ground nutmeg (1g)
- 2 tablespoons unsalted butter, cut into small pieces (30g)
- 1 ½ cups all-purpose flour (190g)
- ⅓ cup granulated sugar (65g)
- 1 ½ teaspoons baking powder (6g)
- ¼ teaspoon salt (1.5g)
- 6 tablespoons unsalted butter, cold and cut into small pieces (85g)
- ½ cup whole milk (120ml)
- 1 tablespoon granulated sugar (for sprinkling)
Instructions:
- Combine sliced peaches, sugar, flour, lemon juice, cinnamon, and nutmeg in a large bowl. Toss gently to coat. Dot with butter pieces.
- In a medium bowl, whisk together flour, sugar, baking powder, and salt. Cut in cold butter using a pastry blender or fork until the mixture resembles coarse crumbs.
- Gradually add milk to the flour mixture, mixing until just combined. Do not overmix.
- Pour the peach filling into the prepared baking dish. Drop spoonfuls of biscuit dough evenly over the peach filling.
- Sprinkle the top of the cobbler with remaining sugar. Bake in a preheated oven at 375°F (190°C) for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
- Let cool slightly before serving.
