Ingredients:
- 12 oz cheese tortellini (fresh or frozen)
- 1 lb lean ground turkey
- 1 medium onion, finely chopped
- 1 medium green bell pepper, diced
- 1 cup sliced mushrooms
- 2 cloves garlic, minced
- 4 oz low-fat cream cheese
- 1 cup low-sodium vegetable broth
- 2 tbsp soy sauce (low sodium)
- 1 cup shredded reduced-fat cheddar cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
- In a large pot of boiling salted water, cook the tortellini according to package instructions. Drain and set aside.
- In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and diced bell pepper. Sauté for about 5 minutes until softened.
- Add the sliced mushrooms and minced garlic to the skillet; cook for an additional three minutes.
- Add the ground turkey to the skillet and cook until browned, breaking it apart with a spatula as it cooks.
- Stir in the cream cheese until melted and well combined with the meat mixture.
- Pour in the vegetable broth and soy sauce; mix well to combine all ingredients evenly.
