Ingredients:

  • 12 oz cheese tortellini (fresh or frozen)
  • 1 lb lean ground turkey
  • 1 medium onion, finely chopped
  • 1 medium green bell pepper, diced
  • 1 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 4 oz low-fat cream cheese
  • 1 cup low-sodium vegetable broth
  • 2 tbsp soy sauce (low sodium)
  • 1 cup shredded reduced-fat cheddar cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions:

  1. In a large pot of boiling salted water, cook the tortellini according to package instructions. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Once hot, add the chopped onion and diced bell pepper. Sauté for about 5 minutes until softened.
  3. Add the sliced mushrooms and minced garlic to the skillet; cook for an additional three minutes.
  4. Add the ground turkey to the skillet and cook until browned, breaking it apart with a spatula as it cooks.
  5. Stir in the cream cheese until melted and well combined with the meat mixture.
  6. Pour in the vegetable broth and soy sauce; mix well to combine all ingredients evenly.
