Ingredients:
- 3 cups Granny Smith apples, peeled and diced into 1/4 inch cubes
- 1 tbsp Lemon juice
- 1 tsp Ground cinnamon
- 1/4 tsp Ground nutmeg
- 1.5 cups All-purpose flour
- 1/4 cup Granulated sugar
- 2 tsp Baking powder
- 1/2 tsp Salt
- 1/2 cup Greek yogurt, plain
- 2 Large eggs
- 1 tsp Vanilla extract
- 2 tbsp Melted coconut oil
- 1 cup Powdered sugar, sifted
- 2 tbsp Unsweetened almond milk
- 1/2 tsp Vanilla bean paste
Instructions:
- Toss diced Granny Smith apples with lemon juice, cinnamon, and nutmeg. Place them in a fine-mesh strainer over a bowl and let sit for 10 minutes to drain excess moisture.
- In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
- Create a well in the center of the dry ingredients. Add the Greek yogurt, eggs, vanilla extract, and melted coconut oil. Stir until just combined, being careful not to overmix.
- Gently fold the drained apples into the batter until evenly distributed.
- Portion the dough into 12 mounds. Using an air fryer or convection oven at 375°F (190°C), cook for 12-15 minutes until the exterior is mahogany-colored and crisp.
- Whisk together powdered sugar, almond milk, and vanilla bean paste to create the glaze. Drizzle over warm fritters while they sit on a wire cooling rack.
