Ingredients:

  • 3 cups Granny Smith apples, peeled and diced into 1/4 inch cubes
  • 1 tbsp Lemon juice
  • 1 tsp Ground cinnamon
  • 1/4 tsp Ground nutmeg
  • 1.5 cups All-purpose flour
  • 1/4 cup Granulated sugar
  • 2 tsp Baking powder
  • 1/2 tsp Salt
  • 1/2 cup Greek yogurt, plain
  • 2 Large eggs
  • 1 tsp Vanilla extract
  • 2 tbsp Melted coconut oil
  • 1 cup Powdered sugar, sifted
  • 2 tbsp Unsweetened almond milk
  • 1/2 tsp Vanilla bean paste

Instructions:

  1. Toss diced Granny Smith apples with lemon juice, cinnamon, and nutmeg. Place them in a fine-mesh strainer over a bowl and let sit for 10 minutes to drain excess moisture.
  2. In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. Create a well in the center of the dry ingredients. Add the Greek yogurt, eggs, vanilla extract, and melted coconut oil. Stir until just combined, being careful not to overmix.
  4. Gently fold the drained apples into the batter until evenly distributed.
  5. Portion the dough into 12 mounds. Using an air fryer or convection oven at 375°F (190°C), cook for 12-15 minutes until the exterior is mahogany-colored and crisp.
  6. Whisk together powdered sugar, almond milk, and vanilla bean paste to create the glaze. Drizzle over warm fritters while they sit on a wire cooling rack.
