Ingredients:
- 1 cup (200g) granulated sugar
- ½ cup (100g) brown sugar, packed
- ½ cup (115g) unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (130g) all-purpose flour
- ½ cup (40g) unsweetened cocoa powder
- 2 teaspoons baking powder
- ¼ teaspoon salt
- ½ cup (90g) chocolate chips (optional)
- ½ cup (60g) powdered sugar
Instructions:
- In a mixing bowl, cream together granulated sugar, brown sugar, and unsalted butter until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in vanilla.
- In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in chocolate chips if using.
- Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
- Preheat oven to 350°F (175°C).
- Using a cookie scoop or tablespoon, scoop dough and roll into balls. Roll each ball in powdered sugar to coat completely.
- Place coated dough balls onto prepared baking sheets, spacing them about 2 inches apart.
- Bake for 10-12 minutes until cookies are set but slightly soft in the center.
- Remove from oven, let cool on baking sheets for 5 minutes, then transfer to a cooling rack to cool completely.
