Ingredients:

  • 1 cup (200g) granulated sugar
  • ½ cup (100g) brown sugar, packed
  • ½ cup (115g) unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (130g) all-purpose flour
  • ½ cup (40g) unsweetened cocoa powder
  • 2 teaspoons baking powder
  • ¼ teaspoon salt
  • ½ cup (90g) chocolate chips (optional)
  • ½ cup (60g) powdered sugar

Instructions:

  1. In a mixing bowl, cream together granulated sugar, brown sugar, and unsalted butter until light and fluffy.
  2. Add eggs one at a time, mixing well after each addition, then stir in vanilla.
  3. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in chocolate chips if using.
  5. Cover the dough with plastic wrap and chill in the refrigerator for at least 30 minutes.
  6. Preheat oven to 350°F (175°C).
  7. Using a cookie scoop or tablespoon, scoop dough and roll into balls. Roll each ball in powdered sugar to coat completely.
  8. Place coated dough balls onto prepared baking sheets, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes until cookies are set but slightly soft in the center.
  10. Remove from oven, let cool on baking sheets for 5 minutes, then transfer to a cooling rack to cool completely.
