Ingredients:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup buttermilk
  • 1 large egg
  • 1 small onion, finely chopped
  • Vegetable oil for frying

Instructions:

  1. Pour vegetable oil into a deep skillet to a depth of about 2 inches; heat over medium-high heat until it reaches 350°F (175°C).
  2. In a large mixing bowl, whisk together cornmeal, flour, baking powder, salt, sugar, black pepper, garlic powder, and onion powder.
  3. In a separate bowl, whisk together buttermilk and the egg until well combined.
  4. Pour the wet mixture into the dry ingredients, stirring until just combined.
  5. Gently fold in the chopped onion until evenly distributed.
  6. Using a spoon or small scoop, drop spoonfuls of batter into the hot oil, frying in batches. Cook for 3-4 minutes until golden brown on all sides.
  7. Use a slotted spoon to remove the hush puppies from the oil, and place them on paper towels to drain excess oil.
  8. Serve warm with your favorite dipping sauce or alongside your meal.
