Ingredients:
- 4 English muffins, split in half (about 400g)
- 2 tablespoons olive oil (30ml)
- 4 large eggs
- 1 cup shredded mozzarella cheese (approx. 100g)
- 1/2 cup cooked breakfast sausage, crumbled (75g)
- 1/2 cup cherry tomatoes, halved (about 75g)
- 1/4 teaspoon salt (1.5g)
- 1/4 teaspoon black pepper (1.5g)
- 1/4 teaspoon dried Italian herbs (1g)
- Fresh basil or parsley, chopped (optional)
- Hot sauce (optional)
Instructions:
- Preheat the oven to 375°F (190°C).
- Prepare a baking sheet; line with parchment paper if desired.
- Brush the cut sides of the English muffins with olive oil and place them on the baking sheet, cut-side up.
- Whisk eggs in a mixing bowl; season with salt and pepper.
- Pour a small amount of the egg mixture onto each muffin half.
- Sprinkle shredded mozzarella, sausage, and cherry tomatoes evenly on top of the muffins.
- Bake in preheated oven for 12-15 minutes, or until the eggs are set and cheese is bubbly.
- Garnish with fresh herbs and serve immediately.
