Ingredients:

  • 4 English muffins, split in half (about 400g)
  • 2 tablespoons olive oil (30ml)
  • 4 large eggs
  • 1 cup shredded mozzarella cheese (approx. 100g)
  • 1/2 cup cooked breakfast sausage, crumbled (75g)
  • 1/2 cup cherry tomatoes, halved (about 75g)
  • 1/4 teaspoon salt (1.5g)
  • 1/4 teaspoon black pepper (1.5g)
  • 1/4 teaspoon dried Italian herbs (1g)
  • Fresh basil or parsley, chopped (optional)
  • Hot sauce (optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare a baking sheet; line with parchment paper if desired.
  3. Brush the cut sides of the English muffins with olive oil and place them on the baking sheet, cut-side up.
  4. Whisk eggs in a mixing bowl; season with salt and pepper.
  5. Pour a small amount of the egg mixture onto each muffin half.
  6. Sprinkle shredded mozzarella, sausage, and cherry tomatoes evenly on top of the muffins.
  7. Bake in preheated oven for 12-15 minutes, or until the eggs are set and cheese is bubbly.
  8. Garnish with fresh herbs and serve immediately.
