Ingredients:
- 1 cup creamy peanut butter (preferably natural)
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups all-purpose flour
- Additional granulated sugar for rolling
Instructions:
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine peanut butter, granulated sugar, brown sugar, eggs, and vanilla extract. Beat until smooth.
- In another bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Roll tablespoonfuls of dough into balls and place them on a baking sheet lined with parchment paper. Use a fork to flatten each ball and create a crisscross pattern, dipping the fork in sugar if desired.
- Bake in preheated oven for 10-12 minutes or until the edges are golden and cookies are just set.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
