Ingredients:

  • 1 cup creamy peanut butter (preferably natural)
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups all-purpose flour
  • Additional granulated sugar for rolling

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter, granulated sugar, brown sugar, eggs, and vanilla extract. Beat until smooth.
  3. In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  5. Roll tablespoonfuls of dough into balls and place them on a baking sheet lined with parchment paper. Use a fork to flatten each ball and create a crisscross pattern, dipping the fork in sugar if desired.
  6. Bake in preheated oven for 10-12 minutes or until the edges are golden and cookies are just set.
  7. Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
