Ingredients:
- 1 lb ground beef (80/20 blend for flavor)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes with green chilies
- 1 can (8 oz) tomato sauce
- 1 taco seasoning packet (1 oz)
- 8 oz spaghetti noodles (uncooked)
- 2 cups beef broth (low sodium recommended)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- Fresh cilantro, for topping (optional)
Instructions:
- In a large skillet, brown the ground beef over medium heat until no longer pink, about 5-7 minutes. Drain excess fat and return beef to skillet.
- Add diced onion, minced garlic, black beans, diced tomatoes, tomato sauce, and taco seasoning to the beef. Stir to combine.
- Pour the beef mixture into the crockpot. Add beef broth and mix well.
- Cover and set the crockpot on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving
- Cover and cook for an additional 30 minutes, or until spaghetti is tender.
- Once cooked, serve topped with shredded cheese, sour cream, and cilantro.
