Ingredients:

  • 1 lb ground beef (80/20 blend for flavor)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes with green chilies
  • 1 can (8 oz) tomato sauce
  • 1 taco seasoning packet (1 oz)
  • 8 oz spaghetti noodles (uncooked)
  • 2 cups beef broth (low sodium recommended)
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • Fresh cilantro, for topping (optional)

Instructions:

  1. In a large skillet, brown the ground beef over medium heat until no longer pink, about 5-7 minutes. Drain excess fat and return beef to skillet.
  2. Add diced onion, minced garlic, black beans, diced tomatoes, tomato sauce, and taco seasoning to the beef. Stir to combine.
  3. Pour the beef mixture into the crockpot. Add beef broth and mix well.
  4. Cover and set the crockpot on low for 6-8 hours or high for 3-4 hours.
  5. About 30 minutes before serving
  6. Cover and cook for an additional 30 minutes, or until spaghetti is tender.
  7. Once cooked, serve topped with shredded cheese, sour cream, and cilantro.
