Ingredients:
- 2 medium zucchini (about 400g/14oz), grated
- 1/2 teaspoon salt
- 1 large egg, lightly beaten
- 1/4 cup (30g) all-purpose flour, plus more for dusting if needed
- 1/4 cup (25g) grated Parmesan cheese
- 2 tablespoons chopped fresh mint or basil
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil (or vegetable oil)
Instructions:
- Grate the zucchini using a box grater. Place the grated zucchini in a colander, sprinkle with salt, and let it sit for 5-10 minutes to drain excess moisture. Squeeze out as much liquid as possible.
- In a large bowl, combine the drained zucchini, egg, flour, Parmesan cheese, fresh herbs, garlic, and pepper. Mix until just combined.
- Heat the olive oil in a large frying pan over medium heat.
- Drop spoonfuls (about 2 tablespoons each) of the zucchini mixture into the hot oil, gently flattening each one. Fry for 2-3 minutes per side, or until golden brown and crispy.
- Remove the fritters from the pan and place them on a plate lined with paper towels to drain excess oil. Serve immediately.
