Ingredients:

  • 1 lb yellow summer squash, sliced into 1/2-inch rounds
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/4 tsp dried oregano

Instructions:

  1. Preheat your oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
  2. In a large mixing bowl, toss the sliced yellow squash with olive oil, salt, and pepper until lightly coated.
  3. Sprinkle garlic powder and dried oregano over the squash and toss again. Gently fold in the grated Parmesan cheese until the cheese clings to the squash surfaces.
  4. Arrange the slices in a single layer on the baking sheet, ensuring they are not touching. Bake for 12–15 minutes until edges are golden-brown.
  5. Optional: Switch the oven to broil for the final 60–90 seconds until the cheese bubbles and turns deep gold.
