- 1 lb yellow summer squash, sliced into 1/2-inch rounds
- 1 tbsp extra virgin olive oil
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- 1/2 tsp garlic powder
- 1/4 tsp dried oregano
Instructions:
- Preheat your oven to 425°F (218°C) and line a large rimmed baking sheet with parchment paper.
- In a large mixing bowl, toss the sliced yellow squash with olive oil, salt, and pepper until lightly coated.
- Sprinkle garlic powder and dried oregano over the squash and toss again. Gently fold in the grated Parmesan cheese until the cheese clings to the squash surfaces.
- Arrange the slices in a single layer on the baking sheet, ensuring they are not touching. Bake for 12–15 minutes until edges are golden-brown.
- Optional: Switch the oven to broil for the final 60–90 seconds until the cheese bubbles and turns deep gold.
