Ingredients:
- 3 cups (270g) rolled oats (old-fashioned oats), not instant
- 1/2 cup (100g) packed brown sugar, light or dark
- 1 teaspoon (5ml) baking powder
- 1 teaspoon (6g) ground cinnamon
- 1/4 teaspoon (1.5g) ground nutmeg
- 1/4 teaspoon (1.5g) salt
- 2 cups (475ml) milk (dairy or non-dairy)
- 2 large eggs
- 1/4 cup (60ml) unsweetened applesauce
- 2 tablespoons (30ml) melted unsalted butter, cooled slightly, or coconut oil
- 1 teaspoon (5ml) vanilla extract
- 2 medium apples (Granny Smith, Honeycrisp, or Gala), peeled, cored, and diced
- 1 tablespoon (15ml) lemon juice (to prevent browning)
Instructions:
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large bowl, whisk together the oats, brown sugar, baking powder, cinnamon, nutmeg, and salt.
- In a separate bowl, whisk together the milk, eggs, applesauce, melted butter or oil, and vanilla extract.
- Toss the diced apples with lemon juice in a small bowl.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix!
- Gently fold the apples into the oatmeal mixture.
- Pour the mixture into the prepared baking dish.
- Bake for 40-45 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
- Let cool for 10 minutes before serving.
