Ingredients:

  • 3 cups (270g) rolled oats (old-fashioned oats), not instant
  • 1/2 cup (100g) packed brown sugar, light or dark
  • 1 teaspoon (5ml) baking powder
  • 1 teaspoon (6g) ground cinnamon
  • 1/4 teaspoon (1.5g) ground nutmeg
  • 1/4 teaspoon (1.5g) salt
  • 2 cups (475ml) milk (dairy or non-dairy)
  • 2 large eggs
  • 1/4 cup (60ml) unsweetened applesauce
  • 2 tablespoons (30ml) melted unsalted butter, cooled slightly, or coconut oil
  • 1 teaspoon (5ml) vanilla extract
  • 2 medium apples (Granny Smith, Honeycrisp, or Gala), peeled, cored, and diced
  • 1 tablespoon (15ml) lemon juice (to prevent browning)

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, whisk together the oats, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the milk, eggs, applesauce, melted butter or oil, and vanilla extract.
  4. Toss the diced apples with lemon juice in a small bowl.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix!
  6. Gently fold the apples into the oatmeal mixture.
  7. Pour the mixture into the prepared baking dish.
  8. Bake for 40-45 minutes, or until the top is golden brown and a knife inserted into the center comes out clean.
  9. Let cool for 10 minutes before serving.
