Ingredients:
- 6 slices of white bread (or brioche), crusts removed (approximately 300g)
- 100g unsalted butter, softened
- 150g sugar (granulated)
- 4 large eggs
- 500ml whole milk
- 250ml double cream
- 1 tsp vanilla extract
- Pinch of nutmeg
- Pinch of salt
- Optional: 50g raisins or sultanas
Instructions:
- Preheat the oven to 160°C (320°F).
- Lightly butter each slice of bread on one side and cut bread into quarters.
- Layer half the bread in the prepared dish, overlapping slightly and sprinkle with raisins if using.
- In a mixing bowl, whisk together the eggs, sugar, vanilla, nutmeg, and salt until combined. Gradually add the milk and cream, whisking until smooth.
- Pour the custard mixture over the arranged bread.
- Allow to sit for 30 minutes to soak in the custard.
- Place the dish in a baking tray filled with hot water (creating a bain-marie) and bake for 45 minutes, until the custard is set and the top is golden brown.
- Allow to cool slightly before serving warm.
