Ingredients:

  • 6 slices of white bread (or brioche), crusts removed (approximately 300g)
  • 100g unsalted butter, softened
  • 150g sugar (granulated)
  • 4 large eggs
  • 500ml whole milk
  • 250ml double cream
  • 1 tsp vanilla extract
  • Pinch of nutmeg
  • Pinch of salt
  • Optional: 50g raisins or sultanas

Instructions:

  1. Preheat the oven to 160°C (320°F).
  2. Lightly butter each slice of bread on one side and cut bread into quarters.
  3. Layer half the bread in the prepared dish, overlapping slightly and sprinkle with raisins if using.
  4. In a mixing bowl, whisk together the eggs, sugar, vanilla, nutmeg, and salt until combined. Gradually add the milk and cream, whisking until smooth.
  5. Pour the custard mixture over the arranged bread.
  6. Allow to sit for 30 minutes to soak in the custard.
  7. Place the dish in a baking tray filled with hot water (creating a bain-marie) and bake for 45 minutes, until the custard is set and the top is golden brown.
  8. Allow to cool slightly before serving warm.
