Ingredients:

  • 3 large overripe bananas, mashed (about 1.5 cups or 375g)
  • 1/3 cup (75g) unsalted butter, melted
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup (150g) granulated sugar
  • 1 cup (125g) all-purpose flour
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/2 cup (75g) chopped walnuts or pecans (optional)
  • 1/2 cup (90g) chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Grease the loaf pan or line it with parchment paper for easy removal.
  3. In a mixing bowl, mash the bananas with a fork, then stir in melted butter, egg, and vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined; some lumps are okay.
  6. Gently fold in nuts or chocolate chips if using.
  7. Pour the batter into the prepared loaf pan and smooth the top; bake for 55-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
