Ingredients:

  • 2 tablespoons unsalted butter (28g)
  • 1/4 cup all-purpose flour (30g)
  • 1/4 cup unsweetened cocoa powder (25g)
  • 1/2 cup granulated sugar (100g)
  • 1/4 teaspoon salt (1.5g)
  • 2 cups milk (475ml), whole milk preferred for richness
  • 1 teaspoon vanilla extract (5ml)

Instructions:

  1. In a saucepan over medium heat, melt the butter.
  2. Whisk in the flour and cocoa powder until a smooth paste (roux) forms. Cook for about 1 minute, stirring constantly, to toast the flour and develop flavor (be careful not to burn it!).
  3. Whisk in the sugar and salt until well combined.
  4. Gradually whisk in the milk, a little at a time, ensuring no lumps form.
  5. Bring the mixture to a simmer, stirring constantly. Reduce heat to low and continue to simmer, stirring frequently, until the gravy thickens to your desired consistency (about 5-10 minutes).
  6. Remove from heat and stir in the vanilla extract.
  7. Serve immediately over warm biscuits.
