Ingredients:
- 2 tablespoons unsalted butter (28g)
- 1/4 cup all-purpose flour (30g)
- 1/4 cup unsweetened cocoa powder (25g)
- 1/2 cup granulated sugar (100g)
- 1/4 teaspoon salt (1.5g)
- 2 cups milk (475ml), whole milk preferred for richness
- 1 teaspoon vanilla extract (5ml)
Instructions:
- In a saucepan over medium heat, melt the butter.
- Whisk in the flour and cocoa powder until a smooth paste (roux) forms. Cook for about 1 minute, stirring constantly, to toast the flour and develop flavor (be careful not to burn it!).
- Whisk in the sugar and salt until well combined.
- Gradually whisk in the milk, a little at a time, ensuring no lumps form.
- Bring the mixture to a simmer, stirring constantly. Reduce heat to low and continue to simmer, stirring frequently, until the gravy thickens to your desired consistency (about 5-10 minutes).
- Remove from heat and stir in the vanilla extract.
- Serve immediately over warm biscuits.
