Ingredients:
- 3-4 chicken breasts (1½-2 pounds total, boneless and skinless)
- 2 tablespoons olive oil
- ½-1 teaspoon sea salt (adjusted to taste)
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- ½ teaspoon ground cumin
- ½ teaspoon smoked paprika
- 1 teaspoon cracked black pepper (adjusted to taste)
- ½ teaspoon dried oregano
- 2 ripe mangoes, diced (about 3 cups)
- 1 red bell pepper, diced
- 1 jalapeño pepper, seeded and finely diced
- 2 tablespoons red onion, finely diced
- Juice of 1 lime
- 1 teaspoon lime zest
- ⅓ cup fresh cilantro, loosely packed and chopped
- ¼ teaspoon sea salt
Instructions:
- Preheat your oven to 425°F (220°C).
- Place chicken breasts in a baking dish and pound to an even thickness of about 1 inch using a meat mallet.
- Brush olive oil on both sides of each chicken breast. Combine garlic powder, chili powder, cumin, smoked paprika, black pepper, and oregano in a bowl, then evenly sprinkle the seasoning mixture over the chicken.
- Place the seasoned chicken in the oven and bake for 17-22 minutes. Check the internal temperature to ensure it reaches 165°F (74°C).
- In a medium bowl, combine diced mango, red bell pepper, jalapeño, red onion, lime juice, lime zest, chopped cilantro, and sea salt. Toss gently to combine and refrigerate until needed.
- Once baked, let the chicken rest for 5 minutes to retain juiciness. Serve topped with a generous spoonful of chilled mango salsa.
