Ingredients:
- 4 slices sourdough or Italian bread
- 1 cup (225g) cooked breaded chicken, sliced or chopped
- ½ cup (120ml) marinara sauce
- 4 slices mozzarella cheese (or about 4 oz/115g shredded mozzarella)
- 2 tablespoons (15g) grated Parmesan cheese
- 2 tablespoons (30g) unsalted butter, softened
- Fresh basil or parsley (optional, for garnish)
Instructions:
- Warm the cooked breaded chicken in a skillet or oven until heated through. If using frozen, cook according to package directions. Cut into bite-sized pieces for easy sandwich layering.
- Lay out the bread slices. On two slices, layer 2 slices of mozzarella cheese (or half the shredded), warm chicken, a spoonful of marinara sauce, a sprinkle of Parmesan cheese, and the remaining mozzarella cheese. Top with the other slices of bread.
- Spread softened butter evenly on the outside of each sandwich slice (top and bottom). Sprinkle a little extra Parmesan cheese on the buttered sides for a crispy, cheesy crust.
- Heat a nonstick skillet or griddle over medium heat. Cook each sandwich for 3-5 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted and gooey.
- Slice in half diagonally. Garnish with fresh basil or parsley (optional). Serve immediately with warm marinara sauce on the side for dipping.
