Ingredients:

  • 4 slices sourdough or Italian bread
  • 1 cup (225g) cooked breaded chicken, sliced or chopped
  • ½ cup (120ml) marinara sauce
  • 4 slices mozzarella cheese (or about 4 oz/115g shredded mozzarella)
  • 2 tablespoons (15g) grated Parmesan cheese
  • 2 tablespoons (30g) unsalted butter, softened
  • Fresh basil or parsley (optional, for garnish)

Instructions:

  1. Warm the cooked breaded chicken in a skillet or oven until heated through. If using frozen, cook according to package directions. Cut into bite-sized pieces for easy sandwich layering.
  2. Lay out the bread slices. On two slices, layer 2 slices of mozzarella cheese (or half the shredded), warm chicken, a spoonful of marinara sauce, a sprinkle of Parmesan cheese, and the remaining mozzarella cheese. Top with the other slices of bread.
  3. Spread softened butter evenly on the outside of each sandwich slice (top and bottom). Sprinkle a little extra Parmesan cheese on the buttered sides for a crispy, cheesy crust.
  4. Heat a nonstick skillet or griddle over medium heat. Cook each sandwich for 3-5 minutes per side, pressing gently with a spatula, until golden brown and the cheese is melted and gooey.
  5. Slice in half diagonally. Garnish with fresh basil or parsley (optional). Serve immediately with warm marinara sauce on the side for dipping.
