Ingredients:
- 1 cup (approx. 115g) cauliflower florets, finely chopped or grated
- 4 slices bread (sourdough, whole wheat, or white)
- 4 oz (approx. 115g) shredded cheese (cheddar, mozzarella, Monterey Jack, or a blend)
- 2 tbsp (30g) unsalted butter, softened
- 1 tbsp (15g) mayonnaise (optional)
- Salt and freshly ground black pepper, to taste
- ½ tsp garlic powder (optional)
- ¼ tsp smoked paprika (optional)
Instructions:
- Finely chop or grate cauliflower. Steam or microwave until just tender. Drain thoroughly and press out excess moisture. Season with salt, pepper, garlic powder (if using), and smoked paprika (if using).
- Spread butter on one side of each bread slice. Optionally, spread mayonnaise on the other side for extra crispiness. On the non-buttered side of two bread slices, layer half the cheese. Top with prepared cauliflower. Add the remaining cheese. Top with the remaining bread slices, buttered side facing out.
- Heat a skillet over medium heat. Place sandwiches in the skillet. Cook for 3-4 minutes per side, or until golden brown and cheese is melted. Gently press down with a spatula.
- Remove from skillet. Slice in half (optional). Serve warm and enjoy!
