Ingredients:

  • 2 cups all-purpose flour (or almond flour)
  • 1 cup granulated sugar (or coconut sugar)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup unsweetened applesauce (or yogurt)
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 3 large eggs (or flaxseed eggs: mix 3 tablespoons of ground flaxseed with 9 tablespoons of water and let sit for a few minutes)
  • 2 teaspoons vanilla extract
  • 1 cup chopped pecans (toasted, if desired)

Instructions:

  1. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  2. Combine Wet Ingredients: In another bowl, mix together the applesauce, vegetable oil, eggs or flaxseed mixture, and vanilla extract.
  3. Combine Mixtures: Gradually add the wet ingredients to the dry ingredients. Stir until just combined; do not overmix.
  4. Fold in Pecans: Gently fold in the chopped pecans until evenly distributed throughout the batter.
  5. Pour Batter into Pan: Pour the batter into your prepared loaf pan and spread it out evenly.
  6. Cool & Serve: Allow to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely before slicing.
