Ingredients:
- 1 bag (8 oz) Doritos Nacho Cheese, crushed
- 1 lb ground beef or turkey
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 can (10 oz) cream of chicken soup or cream of mushroom soup
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 packet (1 oz) taco seasoning
- 1 small onion, diced
- 2 cloves garlic, minced
- Optional: Chopped fresh cilantro for garnish
Instructions:
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, sauté the diced onion until soft. Add minced garlic and cook for an additional minute.
- Add the ground beef or turkey and cook until browned (about 5-7 minutes).
- Drain excess grease, then stir in black beans, diced tomatoes, cream of chicken or mushroom soup, taco seasoning, and sour cream.
- Spread a thin layer of crushed Doritos in the bottom of the baking dish. Add half of the meat mixture, then sprinkle with 1 cup of cheddar cheese.
- Repeat with another layer of Doritos, the remaining meat mixture, and another cup of cheddar cheese.
- Finish with a final layer of crushed Doritos and the remaining cheddar cheese on top for extra crunch.
- Bake in preheated oven for 30 minutes, or until bubbling and golden brown.
- Remove from the oven and let cool for a few minutes before serving. Garnish with chopped cilantro if desired.
