Ingredients:

  • 1 bag (8 oz) Doritos Nacho Cheese, crushed
  • 1 lb ground beef or turkey
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (10 oz) cream of chicken soup or cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 packet (1 oz) taco seasoning
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • Optional: Chopped fresh cilantro for garnish

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, sauté the diced onion until soft. Add minced garlic and cook for an additional minute.
  3. Add the ground beef or turkey and cook until browned (about 5-7 minutes).
  4. Drain excess grease, then stir in black beans, diced tomatoes, cream of chicken or mushroom soup, taco seasoning, and sour cream.
  5. Spread a thin layer of crushed Doritos in the bottom of the baking dish. Add half of the meat mixture, then sprinkle with 1 cup of cheddar cheese.
  6. Repeat with another layer of Doritos, the remaining meat mixture, and another cup of cheddar cheese.
  7. Finish with a final layer of crushed Doritos and the remaining cheddar cheese on top for extra crunch.
  8. Bake in preheated oven for 30 minutes, or until bubbling and golden brown.
  9. Remove from the oven and let cool for a few minutes before serving. Garnish with chopped cilantro if desired.
