Ingredients:
- 1 lb ground turkey
- 1 cup breadcrumbs (gluten-free if needed)
- 1/2 cup finely chopped onion
- 2 cloves garlic, minced
- 1 egg (flax egg for vegan alternative)
- 1/4 cup ketchup
- 2 tbsp Worcestershire sauce (vegan version if required)
- Salt and pepper to taste
- 1 tsp smoked paprika
- 4 medium potatoes, peeled and sliced thinly
- 1 cup dairy-free milk
- 1/2 cup shredded cheese (dairy-free cheese for vegan alternative)
- Salt and pepper to taste
- Fresh chives, chopped (for garnish)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, combine ground turkey, breadcrumbs, chopped onion, minced garlic, flax egg, ketchup, Worcestershire sauce, smoked paprika, salt, and pepper. Mix until well combined.
- Shape the mixture into a loaf shape and place it in a baking dish.
- Layer sliced potatoes over the meatloaf in the same baking dish. Pour dairy-free milk over the potatoes. Sprinkle with salt and pepper.
- Evenly distribute shredded cheese on top of the potatoes.
- Cover with foil and bake for about 45 minutes. Remove foil and bake an additional 15 minutes or until golden brown.
- Garnish with fresh chives before serving.
