Ingredients:

  • 1 lb ground turkey
  • 1 cup breadcrumbs (gluten-free if needed)
  • 1/2 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 egg (flax egg for vegan alternative)
  • 1/4 cup ketchup
  • 2 tbsp Worcestershire sauce (vegan version if required)
  • Salt and pepper to taste
  • 1 tsp smoked paprika
  • 4 medium potatoes, peeled and sliced thinly
  • 1 cup dairy-free milk
  • 1/2 cup shredded cheese (dairy-free cheese for vegan alternative)
  • Salt and pepper to taste
  • Fresh chives, chopped (for garnish)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine ground turkey, breadcrumbs, chopped onion, minced garlic, flax egg, ketchup, Worcestershire sauce, smoked paprika, salt, and pepper. Mix until well combined.
  3. Shape the mixture into a loaf shape and place it in a baking dish.
  4. Layer sliced potatoes over the meatloaf in the same baking dish. Pour dairy-free milk over the potatoes. Sprinkle with salt and pepper.
  5. Evenly distribute shredded cheese on top of the potatoes.
  6. Cover with foil and bake for about 45 minutes. Remove foil and bake an additional 15 minutes or until golden brown.
  7. Garnish with fresh chives before serving.
