Ingredients:

  • 3 Large Russet Potatoes (Approx. 1.5 lbs / 680g), scrubbed and peeled
  • 2 Tablespoons Avocado or Grapeseed Oil
  • 1 Teaspoon Fine Sea Salt
  • 1/2 Teaspoon Garlic Powder
  • 1/2 Teaspoon Smoked Paprika
  • 1/4 Teaspoon Freshly Cracked Black Pepper

Instructions:

  1. Slice your potatoes into uniform 1/4-inch sticks using a sharp chef's knife or mandoline slicer to ensure even cooking.
  2. Submerge the cut potatoes in a bowl of ice-cold water for at least 30 minutes to leach out excess surface starch.
  3. Drain the potatoes and use clean kitchen towels to dry them thoroughly. The potatoes must be bone-dry to achieve maximum crunch.
  4. In a large mixing bowl, toss the dried potato sticks with avocado oil, sea salt, garlic powder, smoked paprika, and black pepper until every fry is evenly coated.
  5. Preheat the air fryer to 380°F (193°C). Place the fries in the basket and cook for 15 minutes, shaking the basket vigorously every 5 minutes.
  6. Increase the heat to 400°F (200°C) and cook for the final 3 minutes until they are deep golden and crackling.
