Ingredients:

  • 2 medium zucchini (approx. 500g)
  • 1 tablespoon olive oil (15 ml)
  • Salt and pepper to taste
  • 16 wooden skewers, soaked in water
  • 3 tablespoons soy sauce (45 ml)
  • 2 tablespoons rice vinegar (30 ml)
  • 1 tablespoon honey (15 ml)
  • 1 tablespoon sriracha (15 ml)
  • 1 teaspoon sesame oil (5 ml)
  • 1 clove garlic, minced (1 tsp)
  • 1/2 teaspoon grated ginger (2.5 ml)
  • 1 tablespoon chopped cilantro (15 ml, optional)
  • 1 teaspoon toasted sesame seeds (5 ml, optional)

Instructions:

  1. Soak wooden skewers in water for at least 30 minutes.
  2. Cut zucchini into 1/4-inch thick rounds. Toss with olive oil, salt, and pepper.
  3. Thread zucchini slices onto skewers, about 4-5 slices per skewer.
  4. Whisk together soy sauce, rice vinegar, honey, sriracha, sesame oil, garlic, and ginger.
  5. Preheat grill to medium heat. Place skewers on grill and cook for 4-6 minutes per side.
  6. During the last 2 minutes, brush with sauce, turning frequently.
  7. Remove from grill, garnish with cilantro and sesame seeds if desired. Serve immediately.
