Ingredients:
- 2 medium zucchini (about 400g), diced
- 1/2 red onion, finely diced
- 1 jalapeño, seeded and minced
- 1 red bell pepper, finely diced
- 1/2 cup fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 lime, juiced
- 2 tablespoons olive oil
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional)
- Salt and freshly ground black pepper to taste
- 2 tablespoons apple cider vinegar
Instructions:
- Optional: Grill the diced zucchini in a skillet with olive oil until slightly softened and lightly charred. Let cool slightly. Alternatively, use zucchini raw.
- In a large mixing bowl, combine the diced zucchini, red onion, jalapeño, red bell pepper, cilantro, and garlic.
- Drizzle with olive oil and lime juice. Add the cumin, cayenne pepper (if using), apple cider vinegar, salt, and pepper.
- Gently toss all ingredients until well combined.
- Taste the Zucchini Salsa and adjust seasonings as needed. Add more lime juice for tanginess, jalapeño for heat, or salt and pepper to taste.
- Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld.
- Serve chilled with your favorite chips, grilled meats, or vegetables.
