Ingredients:

  • 2 medium zucchini (about 400g), diced
  • 1/2 red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 1 red bell pepper, finely diced
  • 1/2 cup fresh cilantro, chopped
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons apple cider vinegar

Instructions:

  1. Optional: Grill the diced zucchini in a skillet with olive oil until slightly softened and lightly charred. Let cool slightly. Alternatively, use zucchini raw.
  2. In a large mixing bowl, combine the diced zucchini, red onion, jalapeño, red bell pepper, cilantro, and garlic.
  3. Drizzle with olive oil and lime juice. Add the cumin, cayenne pepper (if using), apple cider vinegar, salt, and pepper.
  4. Gently toss all ingredients until well combined.
  5. Taste the Zucchini Salsa and adjust seasonings as needed. Add more lime juice for tanginess, jalapeño for heat, or salt and pepper to taste.
  6. Cover the bowl and refrigerate for at least 15 minutes to allow the flavors to meld.
  7. Serve chilled with your favorite chips, grilled meats, or vegetables.
