Ingredients:
- 2 cups (250g) all-purpose flour, plus extra for dusting
- 1 teaspoon (5g) baking powder
- 1/2 teaspoon (2.5g) baking soda
- 1/2 teaspoon (2.5g) salt
- 1/4 teaspoon (1.25g) black pepper
- 2 large eggs
- 1/2 cup (120ml) vegetable oil
- 1/2 cup (120ml) milk
- 1 teaspoon (5ml) Worcestershire sauce
- 1 1/2 cups (150g) shredded zucchini, excess moisture squeezed out
- 1 cup (100g) shredded cheddar cheese, plus extra for topping
- 1/2 cup (50g) chopped green onions (scallions)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour (or line with parchment) a 9x5 inch loaf pan.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and pepper.
- In a separate medium bowl, whisk together eggs, oil, milk, and Worcestershire sauce.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the shredded zucchini, cheddar cheese, and green onions.
- Pour the batter into the prepared loaf pan.
- Sprinkle extra cheddar cheese over the top of the batter.
- Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
