Ingredients:

  • 2 cups (250g) all-purpose flour, plus extra for dusting
  • 1 teaspoon (5g) baking powder
  • 1/2 teaspoon (2.5g) baking soda
  • 1/2 teaspoon (2.5g) salt
  • 1/4 teaspoon (1.25g) black pepper
  • 2 large eggs
  • 1/2 cup (120ml) vegetable oil
  • 1/2 cup (120ml) milk
  • 1 teaspoon (5ml) Worcestershire sauce
  • 1 1/2 cups (150g) shredded zucchini, excess moisture squeezed out
  • 1 cup (100g) shredded cheddar cheese, plus extra for topping
  • 1/2 cup (50g) chopped green onions (scallions)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease and flour (or line with parchment) a 9x5 inch loaf pan.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and pepper.
  3. In a separate medium bowl, whisk together eggs, oil, milk, and Worcestershire sauce.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the shredded zucchini, cheddar cheese, and green onions.
  6. Pour the batter into the prepared loaf pan.
  7. Sprinkle extra cheddar cheese over the top of the batter.
  8. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the bread cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
