Ingredients:

  • ¼ cup (60ml) olive oil
  • ¼ cup (60ml) fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh oregano (or 1 teaspoon dried)
  • 1 teaspoon lemon zest
  • ½ teaspoon red pepper flakes (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 pound (450g) large shrimp, peeled and deveined
  • Wooden or metal skewers

Instructions:

  1. In a medium bowl, whisk together olive oil, lemon juice, minced garlic, parsley, oregano, lemon zest, red pepper flakes (if using), salt, and pepper.
  2. Place the shrimp in the bowl with the marinade and toss to coat evenly. Cover and refrigerate for 30 minutes to 1 hour.
  3. Preheat your grill to medium-high heat (about 375-450°F or 190-230°C). Clean and lightly oil the grill grates.
  4. Thread the marinated shrimp onto skewers, leaving a small space between each shrimp.
  5. Place the skewers on the preheated grill. Cook for 3-4 minutes per side, or until the shrimp are pink and opaque.
  6. Remove the shrimp skewers from the grill and serve immediately.
