Ingredients:
- ¼ cup (60ml) olive oil
- ¼ cup (60ml) fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh oregano (or 1 teaspoon dried)
- 1 teaspoon lemon zest
- ½ teaspoon red pepper flakes (optional)
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 pound (450g) large shrimp, peeled and deveined
- Wooden or metal skewers
Instructions:
- In a medium bowl, whisk together olive oil, lemon juice, minced garlic, parsley, oregano, lemon zest, red pepper flakes (if using), salt, and pepper.
- Place the shrimp in the bowl with the marinade and toss to coat evenly. Cover and refrigerate for 30 minutes to 1 hour.
- Preheat your grill to medium-high heat (about 375-450°F or 190-230°C). Clean and lightly oil the grill grates.
- Thread the marinated shrimp onto skewers, leaving a small space between each shrimp.
- Place the skewers on the preheated grill. Cook for 3-4 minutes per side, or until the shrimp are pink and opaque.
- Remove the shrimp skewers from the grill and serve immediately.
