Ingredients:

  • 1 large head romaine lettuce, chopped (approximately 300g)
  • 1 lb (450g) cooked chicken, diced into bite-sized pieces
  • ½ cup (115g) crumbled feta cheese
  • 4-5 green onions, thinly sliced
  • ½ bunch fresh dill, chopped (approximately ¼ cup chopped)
  • Pita chips, crushed, for serving (optional)
  • ¼ cup (60ml) olive oil
  • ⅛ cup (30ml) lemon juice
  • ½ tbsp honey (approximately 7.5ml)
  • ¼ tsp (1.5g) salt
  • ¼ tsp (0.5g) black pepper
  • ¼ tsp (0.5g) red pepper flakes (optional, for a kick)

Instructions:

  1. In a jar or measuring cup, combine olive oil, lemon juice, honey, salt, pepper, and red pepper flakes (if using).
  2. Seal the jar (if using a jar) or use a whisk to mix until well combined and emulsified. Set aside.
  3. In a large bowl, combine the chopped romaine lettuce, diced cooked chicken, crumbled feta cheese, sliced green onions, and chopped fresh dill.
  4. Pour the desired amount of lemon vinaigrette over the salad. Start with less and add more to your liking.
  5. Gently toss the salad until all the ingredients are evenly coated with the vinaigrette.
  6. Garnish with crushed pita chips (if using) and serve the salad immediately for optimal freshness.
