Ingredients:
- 1 large head romaine lettuce, chopped (approximately 300g)
- 1 lb (450g) cooked chicken, diced into bite-sized pieces
- ½ cup (115g) crumbled feta cheese
- 4-5 green onions, thinly sliced
- ½ bunch fresh dill, chopped (approximately ¼ cup chopped)
- Pita chips, crushed, for serving (optional)
- ¼ cup (60ml) olive oil
- ⅛ cup (30ml) lemon juice
- ½ tbsp honey (approximately 7.5ml)
- ¼ tsp (1.5g) salt
- ¼ tsp (0.5g) black pepper
- ¼ tsp (0.5g) red pepper flakes (optional, for a kick)
Instructions:
- In a jar or measuring cup, combine olive oil, lemon juice, honey, salt, pepper, and red pepper flakes (if using).
- Seal the jar (if using a jar) or use a whisk to mix until well combined and emulsified. Set aside.
- In a large bowl, combine the chopped romaine lettuce, diced cooked chicken, crumbled feta cheese, sliced green onions, and chopped fresh dill.
- Pour the desired amount of lemon vinaigrette over the salad. Start with less and add more to your liking.
- Gently toss the salad until all the ingredients are evenly coated with the vinaigrette.
- Garnish with crushed pita chips (if using) and serve the salad immediately for optimal freshness.
