Ingredients:
- 24 wonton wrappers
- 1 tablespoon olive oil (15 ml)
- Cooking spray
- 1 pound (450g) medium shrimp, peeled and deveined
- 2 tablespoons olive oil (30 ml)
- 2 cloves garlic, minced
- 1 red chili, finely chopped (or ½ teaspoon red pepper flakes)
- Juice of 2 limes
- 1 tablespoon honey (15ml)
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper
- Fresh cilantro, chopped (optional)
- Lime wedges (optional)
- Sriracha mayo (optional)
- Avocado, diced (optional)
Instructions:
- Gently press wonton wrappers into each muffin tin cup. Brush lightly with olive oil and spray with cooking spray. Bake until golden brown and crispy at 350°F (175°C).
- In a large bowl, combine shrimp, olive oil, garlic, chili, lime juice, honey, salt, and pepper. Toss to coat. Let marinate for 15 minutes.
- Heat a large skillet over medium-high heat. Add shrimp in a single layer and cook until pink and opaque, flipping once. Do not overcook.
- Remove wonton cups from muffin tin. Fill each cup with a portion of the cooked shrimp mixture.
