Ingredients:

  • 24 wonton wrappers
  • 1 tablespoon olive oil (15 ml)
  • Cooking spray
  • 1 pound (450g) medium shrimp, peeled and deveined
  • 2 tablespoons olive oil (30 ml)
  • 2 cloves garlic, minced
  • 1 red chili, finely chopped (or ½ teaspoon red pepper flakes)
  • Juice of 2 limes
  • 1 tablespoon honey (15ml)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • Fresh cilantro, chopped (optional)
  • Lime wedges (optional)
  • Sriracha mayo (optional)
  • Avocado, diced (optional)

Instructions:

  1. Gently press wonton wrappers into each muffin tin cup. Brush lightly with olive oil and spray with cooking spray. Bake until golden brown and crispy at 350°F (175°C).
  2. In a large bowl, combine shrimp, olive oil, garlic, chili, lime juice, honey, salt, and pepper. Toss to coat. Let marinate for 15 minutes.
  3. Heat a large skillet over medium-high heat. Add shrimp in a single layer and cook until pink and opaque, flipping once. Do not overcook.
  4. Remove wonton cups from muffin tin. Fill each cup with a portion of the cooked shrimp mixture.
