Ingredients:

  • 1 can (15 oz / 425 g) black beans, rinsed and drained
  • 1 can (15 oz / 425 g) sweet corn, drained (or 1 ½ cups frozen corn, thawed)
  • 1 medium red bell pepper, diced
  • 1 medium red onion, finely chopped
  • 1 jalapeño, minced (seeds removed for less heat)
  • ½ cup (120 mL) fresh cilantro, chopped
  • 2 tablespoons (30 mL) lime juice (about 1 lime)
  • 1 teaspoon (5 g) ground cumin
  • ½ teaspoon (2 g) salt (to taste)
  • ¼ teaspoon (1 g) black pepper (to taste)

Instructions:

  1. Rinse and drain the black beans and corn.
  2. Dice the red bell pepper and finely chop the onion and jalapeño.
  3. Chop the cilantro.
  4. In a large mixing bowl, add black beans, corn, bell pepper, onion, jalapeño, and cilantro.
  5. Drizzle lime juice over the mixture, and sprinkle with cumin, salt, and pepper.
  6. Gently toss the ingredients with a spatula until evenly combined.
  7. Allow to chill in the refrigerator for at least 30 minutes for flavors to meld.
  8. Enjoy with tortilla chips, as a topping for grilled meats, or on tacos.
