Ingredients:
- 1 can (15 oz / 425 g) black beans, rinsed and drained
- 1 can (15 oz / 425 g) sweet corn, drained (or 1 ½ cups frozen corn, thawed)
- 1 medium red bell pepper, diced
- 1 medium red onion, finely chopped
- 1 jalapeño, minced (seeds removed for less heat)
- ½ cup (120 mL) fresh cilantro, chopped
- 2 tablespoons (30 mL) lime juice (about 1 lime)
- 1 teaspoon (5 g) ground cumin
- ½ teaspoon (2 g) salt (to taste)
- ¼ teaspoon (1 g) black pepper (to taste)
Instructions:
- Rinse and drain the black beans and corn.
- Dice the red bell pepper and finely chop the onion and jalapeño.
- Chop the cilantro.
- In a large mixing bowl, add black beans, corn, bell pepper, onion, jalapeño, and cilantro.
- Drizzle lime juice over the mixture, and sprinkle with cumin, salt, and pepper.
- Gently toss the ingredients with a spatula until evenly combined.
- Allow to chill in the refrigerator for at least 30 minutes for flavors to meld.
- Enjoy with tortilla chips, as a topping for grilled meats, or on tacos.
