Ingredients:
- cup unsalted butter, softened to room temperature
- /4 cup fresh parsley, finely chopped
- tablespoons fresh chives, finely snipped
- large cloves garlic, minced very finely
- teaspoon lemon zest, freshly grated
- teaspoon smoked paprika
- /2 teaspoon red pepper flakes
- /2 teaspoon freshly ground black pepper
- /2 teaspoon coarse sea salt
Instructions:
- Ensure the butter is softened to a workable consistency (room temperature). Finely chop all herbs, mince the garlic, and grate the lemon zest.
- Place the softened butter into a medium mixing bowl.
- Add the parsley, chives, minced garlic, lemon zest, smoked paprika, red pepper flakes, black pepper, and salt to the bowl.
- Using a rubber spatula or wooden spoon, vigorously mix all ingredients together until everything is evenly distributed and the butter is a uniform colour. Scrape down the sides as needed.
- Taste a tiny sample and adjust salt or red pepper flakes if necessary.
- For immediate serving, place the mixture into a small, attractive serving dish. For storage, spoon the mixture onto parchment paper, roll it tightly into a log shape, and twist the ends to seal.
- If rolled, refrigerate for at least 30 minutes to firm up before slicing into thick coins for serving over hot steak or vegetables.
