Ingredients:

  • 1 medium very ripe banana (approx. 120g / 4.2 oz), mashed
  • 2 large eggs (approx. 100g / 3.5 oz)
  • 1/4 teaspoon ground cinnamon (approx. 1g / 0.03 oz)
  • Optional: A few drops of vanilla extract (approx. 1ml / 0.03 fl oz)
  • Optional: Zero-calorie sweetener (like Stevia or Erythritol), to taste (start with 1/2 teaspoon)
  • Cooking spray (non-stick)

Instructions:

  1. In a mixing bowl, thoroughly mash the banana until smooth.
  2. Add the eggs, cinnamon, and vanilla extract (if using) to the mashed banana. Whisk vigorously until well combined. Add sweetener if using.
  3. Lightly coat a non-stick skillet or griddle with cooking spray and heat over medium heat.
  4. Pour 1/4 cup of batter onto the hot skillet for each zero point banana pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip gently using a spatula.
  5. Serve immediately with your favourite toppings.
