Ingredients:
- 1 medium very ripe banana (approx. 120g / 4.2 oz), mashed
- 2 large eggs (approx. 100g / 3.5 oz)
- 1/4 teaspoon ground cinnamon (approx. 1g / 0.03 oz)
- Optional: A few drops of vanilla extract (approx. 1ml / 0.03 fl oz)
- Optional: Zero-calorie sweetener (like Stevia or Erythritol), to taste (start with 1/2 teaspoon)
- Cooking spray (non-stick)
Instructions:
- In a mixing bowl, thoroughly mash the banana until smooth.
- Add the eggs, cinnamon, and vanilla extract (if using) to the mashed banana. Whisk vigorously until well combined. Add sweetener if using.
- Lightly coat a non-stick skillet or griddle with cooking spray and heat over medium heat.
- Pour 1/4 cup of batter onto the hot skillet for each zero point banana pancake. Cook for 2-3 minutes per side, or until golden brown and cooked through. Flip gently using a spatula.
- Serve immediately with your favourite toppings.
