Ingredients:
- 1 cup (200g) yellow split peas
- 3 cups (710ml) water
- 1/2 tsp (3g) turmeric powder
- 1 tsp (6g) salt
- 2 cups (300g) yellow squash, diced into 1/2 inch cubes
- 1 medium (110g) yellow onion, finely diced
- 1 tbsp (15ml) ginger-garlic paste
- 2 (10g) green chilies, slit lengthwise
- 1/2 tsp (3g) red chili powder
- 2 tbsp (30ml) neutral oil
- 1 tsp (5g) cumin seeds
- 1 tsp (5g) mustard seeds
- 2 dried red chilies
- 1 sprig (2g) curry leaves
- 1 tbsp (15ml) fresh lemon juice
Instructions:
- Rinse the lentils under cold water until the water runs clear.
- In a pot or pressure cooker, combine lentils, 3 cups (710ml) water, turmeric, and salt.
- Simmer on medium-low for 20-25 minutes (stovetop) or cook for 3-4 whistles (pressure cooker) until lentils are soft and mushy.
- Whisk the lentils slightly with a spoon until they reach a smooth, porridge-like consistency.
- Add the diced onion, ginger-garlic paste, and green chilies to the cooked lentils.
- Stir in the diced yellow squash and red chili powder.
- Cook on medium heat for 8-10 minutes, stirring occasionally, until the squash is tender but not completely disintegrated.
- In a small separate pan, heat the neutral oil over medium heat.
- Add mustard seeds; once they begin to pop, add cumin seeds, dried red chilies, and curry leaves.
- Fry for 30 seconds until the cumin smells nutty and the chilies are mahogany-colored.
- Immediately pour this sizzling oil over the dal and stir in the fresh lemon juice.
